Creamy Vegan Potato Soup

So.

Freaking.

Delicious.

Even my kids are in love with it.  Like forced me to serve dinner before 5pm in love.

1 bag Trader Joe’s gold potatoes

1 box Whole Foods miso broth

1/2 red onion

5 cloves garlic

1 TBSP seasoned salt

1 cup unsweetened coconut milk

1/4 block mozzarella almond cheese

Pepper to taste

Wash and quarter, but do not peel, the potatoes.

Place in large lidded pot everything but the coconut milk, almond cheese, and pepper.

Cook until the potatoes just can’t keep themselves together.

In small quantities, so your blender doesn’t die or jump off the counter, blend the ingredients thoroughly with the coconut milk.  Vita Mixes rule.

Return to pot and add in cheese, preferably grated or diced finely to encourage quick melting.  You won’t want it to take long.
